Creating Analytics From Table Not Completions Based

I am trying to create an simple ANALYTIC of x axis - QUALITY EVENTS and Y Axis - NUMBER OF EVENTS LOGGED, but it keeps showing me only the data stored on completions not the total contents of the table column in the created table???

(We are running tests in prep for creating a larger table, data set and analytics but want to get the data manipulation and displays working prior to development)

regarding your question, Analytics can certainly come from data stored in Tables. to do so, navigate to Dashboards, and click Add Chart:

there, you can navigate to Tables, select the Table you want and create the Analysis:
